Cinnamon Coffee Brownies

2 cups flour
2 cups sugar
1 cup butter
4 tablespoons cocoa powder
1 cup brewed coffee, strong
1/2 cup buttermilk
2 whole eggs, beaten
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Frosting:
1/2 cup butter
4 tablespoons cocoa powder
4 cups powdered sugar
1/2 teaspoon cinnamon (1/2 to 1)
3 tablespoons milk
1 teaspoon vanilla

Preheat oven to 350. Grease a 9×13 inch baking pan.

Combine flour and sugar in a large mixing bowl. In a medium saucepan, over medium heat, bring butter, cocoa and coffee to a fast boil. Pour over flour mixture and mix well. Mix buttermilk, eggs, baking soda, cinnamon and vanilla into the flour mixture; mixing well after each addition. spread evenly into the prepared pan.

Bake for 35 minutes in the preheated oven, or until brownies begin to pull away from the sides of the pan.

Frosting: Melt butter over a low heat. Gradually beat in cocoa, powdered sugar, milk and vanilla, mix well. Frost brownies.

NOTES- It really should just say NOTE since I have only 1 thing to say. For the frosting I mixed the powdered sugar, cocoa powder and cinnamon together in advance to make it easier to add to the melted butter. Thats all!

Espresso Crunch Cream Chip Cookies

1/2 cup instant coffee granules, dissovled in 2 T hot water
2 2/3 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, at room temperature
1 1/4 cups sugar
1 teaspoon vanilla
2 whole eggs
8 ounces espresso crunch
1 12 ounce bag white chocolate chips

Heat oven to 350°F.

Dissolve coffee powder in 2 Tbsp hot water. Combine flour, soda and salt.

With a mixer at med. speed, beat butter and sugar until fluffy. Beat in cooled coffee, vanilla and eggs. Reduce mixer speed to low and beat in flour mixture. Add espresso crunch. With a wooden spoon, stir in white chocolate chips.

Drop by heaping teaspoonfuls onto ungreased baking sheets about 3″ apart. Bake until edges start to brown, about 10 minutes. Cool on baking sheets about 3 minutes before removing to racks.

This makes about 6 1/2 dozen cookies.

These have a rich coffee flavor which I thick is balanced by the white chocolate chips.
